Summer is a time for slowing down, relaxing, and treating yourself. That is, it will be once the kids get out of school.  Is anyone else going cuckoo with the craziness of school schedules this time of year?  It seems like the past week has been full of activity, and every morning has been a blur.  Honestly, there have been a few days when I didn’t have time to eat until lunchtime.  Not ok.  
Once I realized that this zaniness must stop (and I had a few minutes to spare), I found some delicious looking and healthy breakfast choices for mornings that are insane in the membrane.  I hope you enjoy them, and if any of you are feeling the end of school year pain like I am, may I just say:  Coffee.  Make sure your healthy breakfast also includes plenty of good, strong coffee.

Avocado toast (if you have time to boil an egg, go ahead and add it as well!)
Granola with berries – I love Trader Joe’s Almond Butter Granola and Trader Joe’s Ancient Grains and Nuts Granola
Peanut butter, banana & chia seed toast
